January is National Oatmeal Month (did you know that was a thing??), and I am here for it. I LOVE oatmeal.
Not only is it full of nutritional benefit, but it’s comforting and delicious, too.
IF you know how to cook it right. Which I did not for a very long time. And bland, mushy oatmeal is definitely not my thing.
Discovering the wonderful world of well-made oatmeal was a game-changer. Turns out, I’m actually a huge fan!
And along the way, I’ve learned several different ways to prepare it.

The Best Stovetop Oatmeal
Mushy oatmeal is a hard pass for me, so I follow Jessica Fisher’s instructions for Not Mushy Oatmeal.
It is THE BEST and pretty much fail-proof. (Unless you don’t set a timer thinking “Oh, I’ll check on it in 5 minutes.” No. Always set a timer, people. ALWAYS SET A TIMER.)

Overnight oats
I love a good make-ahead breakfast, and overnight oats is one of my favorites! It’s quick and easy to make the night before and easy to grab in the morning!
MY FAVORITE OVERNIGHT OATS
1/2 cup milk
2 Tbs peanut butter
1 Tbs pure maple syrup
2 tsp chia seeds
1/2 cup rolled oats (NOT quick)Combine in a mason jar and shake well. Refrigerate overnight. In the morning, heat or enjoy as is! (I prefer it cold.) Top with bananas for an extra treat.

Baked oatmeal
Baked oatmeal is a great way to change things up a bit, and my kids love it. It’s an easy breakfast to make ahead of time and warm up in the morning. You can even freeze it (before baking or after) for later!
Our favorite baked oatmeal comes from Humorous Homemaking, but for a completely “real food” option, I turn to Cookie & Kate.

Steel cut oats
I love the hearty creaminess of steel cut oats but ONLY in the Instant Pot. I have tried unsuccessfully to make them on the stove, but I just don’t like them. So, if you think you don’t like steel cut oats, give them a try in the IP!
