Tacos are great! They’re easy, they’re cheap, and everybody loves them! But they can get a little old week after week. Put a little spice in your Taco Tuesdays with these taco night variations.

Almost without fail, we have some kind of taco dish for dinner every single week.
Why? First of all, because it’s easy, and I’m all about easy dinners! Secondly, I can make it pretty cheaply. Thirdly, I can usually throw something together with stuff I have on hand. And finally (and most importantly), everyone likes it.
Win, win, win, and win.
But the same old tacos every week can get a little boring. (At least for me, since I like a lot of variety in my cooking/our eating.) So, I like to mix things up.
If you want to add a little spice to your Taco Tuesdays, try one of these taco night variations!
Taco Night Variations
Put a little spin on your favorite south-of-the-border meal with these taco night recipes:
- Burritos / Enchiladas
Pro tip: Make a double batch and freeze half for a busy night! - Sheet Pan Nachos

Make your favorite pizza or bread dough, and divide into about a dozen pieces (give or take, depending on the amount of dough). Flatten each piece and top with a small amount of taco sauce, seasoned meat, and cheese. Fold dough over the filling and pinch the sides to seal tightly. (These are great for eating on-the-go, by the way!) - Quesadillas
When I make them for the whole family, I like to make them on sheet pans. - Taco Pasta
- Taco Salads
Topping ideas: meat/beans, cheese, lettuce, black olives, white/red/green onion, avocado, tomatoes, corn, jalapeno, jalapeño, guacamole, salsa or other sauce, sour cream, cilantro, tortilla chips or baked tortilla strips - Taco Pizza
- Burrito Bowls
All the burrito fixin’s (meat and/or beans, cheese, etc.) plus any additional toppings you’d like (avocado, corn, tomato, lettuce, hot sauce) on top of rice. - Tacos with different kinds of meat
Change up your usual ground beef tacos with chicken, pork (ground or carnitas), beef roast, steak, shrimp, or fish! - Taco Cups
- Breakfast Tacos or Breakfast Burritos
A breakfast for dinner + taco night mash-up?? Yes, please! - Taco Kabobs
