What’s your level of pumpkin passion?

- I like a little bit here and there
- Umm… I’m slightly obsessed
On this scale, I’m about a 2 and 3/4. “Obsessed” is such a strong word… but let’s be honest — September hits, and I start making (and buying) pumpkin everything. (Oddly enough, though, I’m not a big fan of pumpkin pie!)
I’ll get burned out on pumpkin here in a few weeks, I’m sure. But in the meantime, I’ll have amassed quite the repertoire of pumpkin delectables. And I’m going to share a few of my favorites with you today!
There are thousands of pumpkin recipes out there, and I could have chosen many of them for this round-up. But since the holidays are right around the corner, and many of us are trying to make good food decisions, I picked out a few of my favorite healthy(er) options.

Sadly, I couldn’t find any “healthy” pumpkin bars. Not ones that looked appealing, anyway. But this coffee cake at least uses mostly real food + less sugar than most recipes. So I think it counts. 😉

The only thing I don’t like about this recipe is having to wash FOUR mixing bowls, but at least it’s quick clean-up with my super-easy-to-clean OXO mixing bowls! (And honestly, the final product is WELL worth it.)

Note: I found the spices to be just a tad overpowering, so I reduced them a bit the second time I made this. But other than that, these overnight oats were delicious!

PUMPKIN PASTA
This isn’t really a recipe, exactly, but it is one of my new favorite pumpkin foods! If you have an ALDI nearby, look for this Pumpkin & Butternut Squash pasta sauce. It’s definitely a seasonal item, so if you spot it, snatch it up! In fact, pick up several.
When I used it, I added some browned & crumbled Italian sausage, served it over pasta, and sprinkled a little shredded Parmesan cheese on top. It was delicious!
